IT MIGHT BE EASY to assume that your supermarket sandwich program is
not the best candidate for
growth, innovation and experimentation. How many
ways can you spice up the
old bread-meat-cheese
standby anyway?

According to IDDBA and
Eddie Yoon, quite a few.
Madison, Wisconsinbased International Dairy
Deli Bakery Association
data shows that 125 million
U.S. households eat deli
meat and 63% of those eat
deli meat from a restaurant

or grocery story. That
means 79 million households are getting sandwiches with deli meat from
foodservice, giving supermarkets a big chance to
push sandwich
sales.
Help guide consumers
by suggesting fl avor
enhancers such as
dressing, mustards,
relish and chutney.
And, of course, be sure
to cross-merchandise
accordingly.

Shoppers are likely buying for later
IDDBA's research shows that, when it comes to deli meat
sandwich shoppers at the supermarket, most are either
buying ahead or are buying as part of a routine. Those two
categories make up 42% of supermarket trips involving deli
sandwiches. Furthermore, a majority of those shoppers are
buying ahead, or as part of a routine, for their own lunch
that will be consumed at home.
Supermarkets also share some similarities with
restaurants when it comes to shoppers satisfying a craving,
fulfilling a request, looking for a quick meal or trying
something new. Sandwich sales among the two outlets
are very similar in all of those categories. Restaurants,
meanwhile, dominate the immediate consumption
category, as well as those shoppers looking to spend time
with someone else while consuming a sandwich.

The biggest chance for supermarket growth is likely those
areas where neither grocery nor restaurants dominate.
IDDBA recommends a three-wave approach to these areas.
Wave 1 Make cheese and meat snack packs readily available
for instore enjoyment to target shoppers looking to satisfy
cravings, try something new or try something healthier.
Wave 2 Drive trips via meal kits and subscriptions to take
advantage of shoppers who say time is limited or are trying to
take advantage of sales.
Wage 3 Expand via ordering kiosks and app improvements
to win targeted foodservice missions. This will go after
shoppers looking for immediate consumption and those
looking to treat themselves.
