In college I briefly flirted with vegetarianism.
I quickly learned there was only so much
tofu, beans and sprouts and other vegetables I
could stand.
I frequently lapsed, and after less than a year I
gave it up. I'm pretty sure I cried during my first trip back to McDonald's.
Today, however, I could make vegetarianism work. I won't, but I could if I
had to.
I tried my first Impossible Whopper a few weeks ago. It's not as good as the
original, but it's still good. One of my kids characterized it as a "decent fast
food burger," and I think that pretty much nailed it. He and I both enjoyed ours
to the last bite. I could not say the same of a plant-based burger of just a few
years ago.
Impossible, of course, isn't alone. Beyond Meat and other producers have
been rolling out new products faster than we in the trade media can write
about them. Some of it is downright good, and a lot of it is in my son's
more-than-acceptable "decent" category.
And it's only growing. The overall size of the plant-based market is around
$4.5 billion today, and it's scheduled to grow to $6 billion or so by 2023, according to a 2019 plantbasedfoods.org market analysis.
"I think we will see huge strides, category by category, as trade-offs in taste
and price point become smaller," consultant Neil Stern told me. "There are
huge advancements being made - the closer the taste and texture can be to
the original alternative, the easier it is for consumers to make a shift."
Will plant-based eventually replace real meat entirely? Doubtful, barring
an environmental catastrophe that forces food producers' and governments' hands.
I look forward to mixing more plant-based into my diet. But taste is still
king. I'll never totally settle for "decent" as long as there are "really awesome"
real-meat options still out there.
