The future
of baking,
now

In the fall of 2017, baking industry leader
Brill Inc. announced it was partnering with
3D printing pioneer 3D Systems Corp. on
something revolutionary: a 3D printer and
other 3D products for bakery and the food
industry in general.
Like most game-changers, this wasn't
something that anyone expected to materialize overnight.
Fast forward two-plus years, and that dream has become reality. Like a big
Christmas present to bakers everywhere, Brill in late December announced its
Brill 3D Culinary System, which will help chefs create customized, cutting-edge
foods and drinks.
The system is a full-color, professional-grade culinary 3D printing system
that stands a good chance of revolutionizing instore bakeries around the world.
It works by relying on the same principle found in many traditional culinary
processes. Chefs begin with separated wet and dry ingredients, and the Brill 3D
Culinary Printer and mixes those ingredients together with automated precision, layer-by-layer, to construct incredible 3D designs.
The new system includes the Brill 3D Culinary Printer and software powered
by 3D Systems technology, the Brill 3D Culinary Powder and Brill 3D Culinary
Binder, all used in tandem to produce a wide array of full-color, life-like and
edible 3D figures and embellishments.
Chefs can use their own design or select from a library of hundreds of 3D
designs to mass-print smaller pieces such as cake decorations, confections
and garnishes or print larger, statement pieces.
Through various 2019 test programs, chefs at casinos and restaurants experienced the capabilities of the technology firsthand and provided real-time
feedback to ensure that every aspect of the technology passed the exacting
standards of commercial kitchens.
The original technology was developed by Kyle von Hasseln of The Sugar
Lab in 2012. The Sugar Lab quickly joined with 3D Systems, and by 2013,
was offering 3D design and print services via the 3D Systems Culinary Lab
to chefs in Los Angeles. The Brill team will be showcasing its shiny new toy
throughout the U.S. in 2020, with anticipated installations of the first systems in
the summer.
