WITHIN THE WORLD OF BARBECUE, THERE ARE MANY DIFFERENT
SUB-CULTURES.
Several cities across the US claim to have the best barbecue, but the
truth is each of these places have their own style with a unique flavor
profile to offer. In their deli/prepared foods departments, grocery stores
are not limited to choosing one signature style as a local restaurant
might. They can lean into their local barbecue flavor trends, and they
can also provide shoppers with a few different styles to try out by
changing up the sauce and seasonings, highlighting which ingredients
make each style stand out.
This can lead to more trial, especially if retailers incorporate global
barbecue flavors into their menus and switch up the format with meal kits
for cuisine fusions like barbecue street tacos. According to Nancy Kruse,
" menu maven and trend tracker " of The Kruse Company, international
barbecue cuisines are among the top five menu trends in 2024.
The competition heats up
The Kansas City, Mo.-based American Royal Association is hosting its
annual World Series of Barbecue this Oct. 31-Nov. 3 at Kansas Speedway
as it celebrates its 125th
anniversary.

Smithfield, Va.-based Smithfield Smoke'NFast partnered with
pitmaster Darren Warth to showcase how its products can be used in
a foodservice/prepared foods menu leading up to the American Royal
event. In 2023, Warth was inducted into the Barbecue Hall of Fame in
Kansas City, and he owns and operates several restaurants in Iowa.

foodservice operators how to simply integrate winning barbecue on

In August, Smoke'NFast hosted a 2024 KC Fantasy BBQ Sweepstakes
offering a chance to win a trip for two to the American Royal World
Series of Barbecue with Warth as the face of the campaign.
