Feta Hearts with Griddled
Watermelon & Pickled Melon

Feta cheese can also add a
ton of flavor to an otherwise
boring salad and be helpful for
consumers who are wanting to
increase their vegetable intake.
Wright-McDuffie suggests for
consumers to try a simple snack of
baby spinach and DODONI Feta with a
drizzle of balsamic glaze. He also said
that feta cheese pairs well with many fruits, especially watermelon.
" The combination might seem surprising, the pairing of juicy sweet
melon with salty, crumbly Greek feta, " he explained.
Retailers can easily create cross-promotion by demoing
combinations of produce items and feta cheese that consumers may
not think to try on their own.
" Our team utilizes both in-store and digital activities, " WrightMcDuffie
said. " Demos are the best tool to drive trial among current/
new feta consumers. "
DODONI uses social media platforms like Instagram and Facebook (@
DODONI.USA) to share the benefits of feta with consumers, and WrightMcDuffie
said the company's updated website features newly developed
recipes and a 'Where to Buy' Destini Product Finder that makes it easy
for consumers to find a retail store selling DODONI products near them.
As for packaging, Wright-McDuffie highlighted that DODONI's tubs
have resealable lids that make it easy for consumers to keep the cheese
fresh longer.

Feta finds at Wegmans
Rochester, N.Y.-based Wegmans is one of many supermarket retailers
carrying DODONI Feta products, among many other feta choices for
consumers.
In fact, Wegmans offers so many feta cheese options that Wegmans
stores have refrigerated cases in their cheese sections completely
dedicated to feta products.
Those cases are primarily filled with Wegmans' private label cheeses,

Watermelon
2 slices of watermelon,
1.5 cm thick
1 tsp extra virgin olive oil
Feta
3 1/2oz DODONI Feta
1 oz Greek yogurt
2 oz cream cheese
1-2 tbsp milk to thin
A pinch of white pepper
Pickled accompaniments
3 balls of cucumber
3 balls of melon
2 fl oz rose flavored vinegar
2 fl oz water
1 oz sugar
Crumb
1 oz panko crumbs
1 tsp sweet paprika
1 tbsp extra virgin olive oil
1 lime, zest only
½ tsp powdered
dried rosemary
Dressing
3 tbsp vinegar solution
3 tbsp extra virgin olive oil
To serve
rocket or watercress
rose petals
pistachio nuts
Preparation
1. In a small saucepan put the vinegar, sugar and water and
bring slowly to a soft boil. Remove the pan from the heat
and leave to cool. Drop the melon and cucumber balls in
the pickling liquor and leave for 15 minutes to absorb the
flavors.
2. Preheat the oven to 200C. Mix the panko crumbs with
the sweet paprika and olive oil on a baking tray and bake
for 5 minutes. Leave to cool and mix in the lime zest,
powdered rosemary and a little salt.
3. In a bowl, put the feta, cream cheese and yogurt and use
a fork to mix well. Add some milk to thin the mix slightly
but not too much and flavor with a little white pepper.
At this point you may add lime zest or chili flakes or
anything else you like to flavor the feta. Spray the heartshaped
mold with a light oil slightly and dust it with some
of the crumb. Spoon in feta mix and even out.
4. Bring a griddle pan to a very high heat and rub with
a tiny amount of extra virgin olive oil. Place the
watermelon slices in the center and use a spatula to press
gently so as to get score marks. Cook for a couple of
minutes on one side only. Transfer onto a plate and keep
to the side.
5. Season desired garnishes with salt and freshly ground
black pepper. Place the feta, melon and cucumber
balls on top of the watermelon and drizzle with dressing.
Sprinkle with the crumb and pistachios.
